“Kale, spinach, and broccoli are three of the healthiest green vegetables around.  Filled with vitamins and nutrients, these powerhouses should be included in your diet on a regular basis.  In honor of St. Patty’s Day, I am going to show you how easy and delicious it can be to consume these healthy, green foods every day.  Yes, that’s right – every day!  How?  By DRINKING them for breakfast!

“I am a huge morning smoothie fan.  There is nothing better than starting your day with an infusion of vegetables.  Most people do not eat nearly enough vegetables recommended for a healthy diet, which is anywhere between 2 1/2 cups and 6 1/2 cups per day.  You can dramatically increase your odds of consuming an adequate amount of veggies on a daily basis by making them a regular part of your breakfast.

“Why my obsession with veggies?  Because there is nothing better for you.  This quote by whgoods.org says it best: ‘You need to eat vegetables every day because you simply cannot find another food group that is as perfectly matched to our everyday human needs as vegetables. Vegetables fit us like a glove. From so many different perspectives, the nature of vegetables and the nature of human health are matched up in a way that simply cannot be duplicated by other food groups, including fruits, legumes, nuts and seeds, grains, seafoods, or poultry and meats.’

Spinach Banana Smoothie

Ingredients

1 cup almond milk

1 cup frozen spinach

1/4 avocado

1 banana

Option to sweeten with 1 tablespoon raw, organic honey, a few prunes or stevia to taste

Directions

Blend the almond milk and spinach in a blender first.  Add the rest of the ingredients and blend on high for one minute.  

Broccoli-Colada 

 Ingredients

1 cup coconut milk

1.5 cup broccoli florets

1 cup frozen pineapple

1/2 banana

Option to sweeten with 1 tablespoon raw, organic honey, a few prunes or stevia to taste

Directions

Blend the coconut milk and broccoli in a blender first.  Add the rest of the ingredients and blend on high for one minute.  

Apple Kale Smoothie

Ingredients

1 cup almond milk

1 cup frozen kale

1 apple

Option to sweeten with 1 tablespoon raw, organic honey, a few prunes or stevia to taste

Directions

Blend the almond milk and kale in a blender first.  Add the apple and blend on high for one minute.
